Story

Vin CERVEAUX is negociant project of LEVIN Wines, a family-owned, organic producer based in Touraine, Loire Valley, which has always eschewed convention. With Vin CERVEAUX, they produce wines beyond the restrictions of their appellation and certification.

Vigneron and négociant-eleveur, Lynne Levin produces the Vin CERVEAUX label directing fruit sourcing, oeneology and blending, guided equally by left brain logic and right brain intuition. In contrast to the Bourré domaine, LEVIN Wines, Vin CERVEAUX sources fruit from sustainable and organic growers beyond the estate. Lynne works with her team of Loire Valley winemakers to coax the greatest expression from these fruit parcels to finish this authentic, intelligent vin.

Sustainable Practices

Environmentally friendly viticulture methods respecting organic philosophies and adapted to suit each terroir. Following cold stabilisation, fermentation takes place at low temperatures in temperature-controlled stainless-steel tanks to preserve the aromatics and refreshing acidity.

Terroir

This Pouilly-Fumé 2014 was made from 100% Sauvignon Blanc grapes, grown and vinified within the Pouilly-Fumé AOC on the eastern edge of the Loire Valley. The soils were originally formed in the Jurassic period (160 million years ago) from the calcareous marine deposits of an ancient inland sea. The Kimmeridgian marl, hard limestone and flint clay and temperate continental climate produce smoky citrus, gunflint and oyster shell minerality, delicate floral notes and ripe grapefruit characters.
